First blog post, HOORAY! Please forgive my poor writing and recipe building skills, this is all very new to me. But it's time to show up and be seen (Brene Brown would be so proud); to get over my insecurities, because it isn't about me, it's about helping people improve their health. A lot of people know that I came from a corporate career in apparel development or as the girl that had the cute storefront, but what people don't know is that I initially was a food and nutrition major in college. I've just reverted back to my true passion...I needed to do more, to be more, and to give more. I've been working behind the scenes for over a year now, seeing clients and teaching classes and feeling like somewhat of a poser because I decided to change careers in my late 30's. Worried that I didn't know enough. I wasn't smart enough. Why would anyone listen to what I had to say about nutrition and overall wellness? But here's the thing, I've already helped a lot of people doing what I LOVE. And in the process, I've realized, that I'm a multi-passionate entrepreneur and I'm fortunate to live in a country where we can be and do whatever we want whenever we want. It's never too late to start anew. I look forward to this space evolving as I do.
Now onto the recipes! I enjoy creating simple, nutrient dense, and of course delicious recipes for my clients. In fact they count on it. It still feels like summer in Southern California so I was craving something easy and light for lunch today. These salads can be pre-made on the weekend and eaten throughout the week when time is limited. The beet salad is a great addition to any meal. And if you don't like the heat just eliminate it or try another seasoning or other type of oil, perhaps avocado. The tuna salad rests on a bed of sprouted broccoli greens, and for an added crunch goRaw sprouted spicy seeds and Inka Original Plantain Chips are on the side. If you're taking my RESTART® class just remove the plantains and the honey from the beet salad and you're good to go. And whenever possible, choose locally grown, organic produce. For meats, your best choice is locally raised, pastured, and organically fed.
